Aloo gobi

Aloo gobi is a "dry" Indian curry, i.e. it does not have a liquid sauce. It is a popular combination of aloo (potato) and gobi (cauliflower) with spices. It is yellowish in color, due to the use of spices such as turmeric, and may contain onion seeds and curry leaves. A number of variations and similar dishes exist. Some Indian restaurants serve it without cauliflower. It is a common staple of Indian buffets in North America.

This dish has a prominient role in the movie Bend It Like Beckham. The DVD contains a featurette titled How to cook Aloo gobi.
