Chocolate liquor

Chocolate liquor, also known as cocoa liqour and cocoa massis is produced by grinding the cocoa bean's center, the cotyledon, to a smooth, liquid state. The chocolate liquor can then be cooled and molded into blocks known as unsweetened baking chocolate. The liquor and blocks contain roughly 53 percent cocoa butter.
Note: Chocolate liquor should not be confused with the alcoholic drink chocolate liqueur. Chocolate liquor does not contain alcohol.
