Coyotas

Coyotas are a typical dessert from northwest Mexico, originally from the state of Sonora. They are a large, flat, round, crispy, pastry and are filled traditionally with brown sugar (although other fillings such as apple or coconut are common), and at roughly 15 cm in diameter, can be considered as a super-sized cookie.
