Mushy peas

Mushy peas are dried marrowfat peas which are first soaked overnight and then boiled until they form a bright green paste. Sodium bicarbonate is often added to soften the peas. They're a traditional Northern English accompaniment to Fish and Chips. At the annual Nottingham Goose Fair they are sold with mint sauce.

They are also sometimes served in batter as a pea fritter.
